Professor Hitz is a master baker, teaching full-time at the International Baking & Pastry Institute at Johnson & Wales University. He has received numerous awards including: 2004 National Bread and Pastry Team Championship 1st place overall and all three of the individual bread awards, 2002 U.S.A. Bread Bakers Guild Team – Coupe du Monde de la Boulangerie, Paris, France, Silver Medal, and has appeared on NBC Today Show, The Food Network, and Ciao Italia!
